I'm assuming it's ok to feed my Grey sliced canned water chestnuts, but
want

I can't speak to the chestnuts themselves, but I don't recall ever
seeing them on the do-not-feed list for birds so they ought to be okay.

HOWEVER... with any canned/prepared food, make sure you check for other
ingredients. In particular, most things are packed with LOTS of salt,
and birds can't handle much salt. Fresh foods are the best bet.

Yes, it's probably best to ignore safe food that your bird likes, and give
it whatever Mrs-Expert-On-All-Things says to give it. Probably the Premium
Crapmix from her "favourite" supplier no doubt. And then steal it's eggs and
flog them on Ebay. Much better.
