I would be less concerned about how she behaves in the car
when she sees them than I would be about how she behaves
while you're walking her when she sees them. If she doesn't
have a good "on by" and decides to take off after somebody
when she's leashed to the bike, there's the potential for
all kinds of havoc. I'd get her to be mannerly on leash,
first, and not use a Springer or similar device until she's
reliable.
A good on by isn't that hard to teach - it's one of the few
black and white situations that exist in this world. Either
she's ignoring distractions and staying focused on you and
the bike, or she's not. If her attention wanders, stop
immediately, get her back to/with you, and reward her like
crazy. Don't start moving again until you're sure she's
focusing on you. If she's still looking around, she's not
ready to go.
