Is it OK to feed our two mice monkey nuts?

We thought they'd enjoy trying to get into them but didn't know if they were
safe to eat or not?

Yes they are fine, although not too many as they *can* cause allergies and
are fattening.
around one monkey nut = 2 nuts per mouse per day will be fine but if you
notice them scratching their ears or other parts, cut them out of their diet
first, likewise if they start piling on weight.
FWIW, they'd much rather have a few dandelion leaves and the odd few blades
of grass.
