I work in an animal shelter, and we often receive pet mice. I have
noticed that hamster food is usually more affordable and comes in
larger packaging than mouse/rat food. Is there any harm in feeding
mice hamster food?

Thanks.

Not in the short term, but if you get the opportunity, mix some
budgie/canary seed with it.
Hamster mixes tend to contain a lot of sunflower seeds and nuts, neither of
these do mice good if fed over extended periods and in the case of nuts, can
cause allergies and sunflower seeds, obesity.
If you are only keeping the animals for short periods of say, a few weeks
then i can't see a problem as millions of pet mice must be fed on hamster
food regularly anyway.
A kilo of millet to a kilo of hamster food is a perfectly good diet for a
mouse...you can feed them other things like greens, but you are probably not
in a position to do things like this with your workload!

I use a mixture of hamster food, wild bird food, porrage oats and some the
fine residue from my bran flake breakfast cereal, for my three mice and they
seem to be very happy and healthy on that diet. One of them is a bit chubby
at 2 1/4 oz, but they get lots of exercise in my ball bearing converted
mouse wheel.
