I have a new rescue dobie about 5 years old. Had her a couple weeks now.
Noticed a couple times her head wobbling uncontrollably, like a mild shaking
from side to side. Nothing major and it obviously isn't hurting her but I
don't recall any of my other dobies having this until they were very old and
only 1 I think did in the past 30 years.
Anyone else run across this?

yes, but I don't have any answers as to cause of possible effect.
Usually it seems to be benign and not to lead to anything, but watch her
carefully for Wobblers disease, a disease of the cervical (neck)
vertebrae. Talk to your vet about it.
