how trainable are they ? how are they with kids ?

i read every piece of information on the net, looked through all the
web sites and even talked to breeders.

Did anyone have a bad experience with that breed ?

Anyone can have a bad experience with any breed.
If someone did have a bad experience, is is mostly it's because they picked
a breed which was not appropriate for them or their lifestyle.
There was recently a wonderful TV show about Canaans. I'm a fairly
experienced dog person, but they wouldn't be a breed I would chose.
I found them very interesting but slightly on the feral side - a little like
the Jindo for example.
I gather the foremost authority on the breed is a lady in Israel who has
tons of them. She takes her bitches out into the deserts to find tribes who
have Canaans with old undocumented lines and unrelated to her dogs. Some of
her dogs are truly gorgeous. I wish I could remember her name for you, but
it now escapes me. I believe the TV show was a National Geographic but am
not sure about that. You should be able to find out about this lady with a
little work however.
I'll bet if you get in touch with the National Canaan breed clubs, someone
will know about her. Her thoughts on breeding are certainly interesting.
Regarding how good they are with children - that's an impossible question to
answer not knowing how experienced you are as a dog trainer, how strict you
are about never leaving any dog alone with a child at any time and how
strict you are about teaching your children to respect animals and not be
allowed to treat them as toys etc.

How does one know "unrelated" when the animal is "undocumented"?

Her ideas on breeding were certainly different. She apparently investigates
travelling "tribes" who have dogs which have not been bred outside their own
for many generations (maybe hundreds of years) and live well away from
civilization. She enlists the help of someone who knows where these people
might be and then travels hundreds of miles through the most dreadful
deserts to find them. Once found, it's not a case of just breeding but
apparently building up some kind of friendship with them first - aided by
her helper who speaks the language - although she apparently speaks whatever
they speak, also to some degree. There is often a great deal of required
etiquette which one must go through first in most cases. Plus the fact that
these people had never seen her before and wonder what she's really there
for since I expect to them, it seemed very strange anyone would come half
way across some desert just to breed a dog.
She doesn't do this kind of outcross all the time obviously, but does take
certain bitches on such jouneys. It was all very interesting. Also many of
these dogs she did find, were not willing to come very close to her even
with a bitch in season. Many stood their ground away from her and just
continued to bark aggressively.
Watching a breeding which did eventually take place, I really wondered about
the safety of the bitch one tied considering the very wary dog might have
wanted to get away from her.
